Matured stretched curd cheese made with whole cow's milk. Pear shape with subterminal constriction with a maximum diameter of 16-22 cm, height of 18-28 cm, weight between 1.5 and 3 kg.

It is sold whole, in half or in quarters.

Smooth rind of hazelnut color. Compact, straw to yellow in color, with variable cracks in size and distribution.

The Colantuono family is inextricably associated with the tradition of transhumance.

This ancient practice was recently recognized by Unesco as a World Heritage entity.

The recognition came also thanks to the immense effort of Carmelina Colantuono who became the spokesperson and promoter of this wonderful initiative.
